#3 Brett Bouckaertii: Brettanomyces bouckaertii was isolated from a Berliner Weisse by Peter Bouckaert after 3 personal trips to Germany. Maturing much more quickly than common bretts, this yeast is a 'claussennii on steroids,' with sweaty fruit, musty cellar, soggy goat, heavy manure, wet hay, spicy cedar, and white pepper.
